Enology Research Program

Enology is the scientific study of wine.  Grape processing usually occurs in August and September.  Wines then go through finishing operations (clarity and stabilization) and are bottled in the spring.  Chemical and sensory analysis are performed after bottling. 

The enology research program answers enology questions and supports viticulture projects.  Areas of study include the stabilization of pigments in non-vinifera red wines, development of varietal character in white wines made from hybrid grapes and acid reduction of wines made from high pH/high acid grapes.
 

Dr. Karl Wilker directs this program.
